Restaurant Thomas Chien offers a refined fine dining experience centered on authentic French cuisine in an ethical and sustainable way, earning the Michelin Green Star for three consecutive years since 2023. Led by culinary director Thomas Chien, the restaurant combines French technique with local ingredients, ethical sourcing, and environmentally conscious practices, even down to the furnishing. It has also been recognized by the French Ministry of Foreign Affairs as “Taiwan’s most authentic French fine dining restaurant.” With advance reservation, the restaurant offers beautifully crafted vegetarian and vegan menus that are both delicious and visually stunning. Highlights include an amuse-bouche trio featuring smoked quail egg perched on a nest of fried vermicelli topped with kochia seed, or the vegan caviar. Inspired by the concept of a warm salad, the signature dish seasonal vegetables is colorful and meticulously prepared with more than 40 different vegetables using a variety of cooking methods. The ratatouille showcases authentic southern French techniques, layering lasagna sheets and stewed vegetables with white sauce, pumpkin puree, potatoes, and parsnip puree.
