Chef-owner Yang Shih-chang is legendary in Taiwan's culinary scene for his homemade udon noodles, which he makes fresh daily. Yang’s restaurant offers several vegetarian udon noodle flavors, side dishes and griddled pancake snacks that are so delicious, they often sell out within hours of opening. In this episode, witness how chef Yang creates his masterful dishes, including his udon noodles, black and white sesame tofu dessert, and iron griddle pancakes. Using traditional techniques, Yang transforms simple, fresh ingredients into flavorful meals and snacks that satisfy both vegetarian and non-vegetarian customers. He has even reimagined the Taiwanese fried chicken steak in a vegetarian form, made from breaded king oyster mushrooms and deep fried for an irresistibly crunchy texture.
