How does he do it? Chef Hu combines authentic Japanese cooking methods with fresh, all-natural ingredients. His creativity has led him to invent unique methods for infusing umami flavors into vegetables, a technique that results in convincing vegetarian sushi dishes that continuously wow his customers. During her visit, Aggie tries out nigiri sushi designed to imitate real seafood such as scallops, oysters, eel and even salmon roe.
