Join host Aggie Hsieh as she samples the best vegetarian nigiri sushi in Kaohsiung, Taiwan! In this episode, Aggie Hsieh pays a visit to Gorou Sushi (五郎時食) in southern Taiwan, a restaurant that is home to Taiwan’s very first vegetarian nigiri sushi. In place of the seafood ingredients used in traditional sushi, chef-owner Hu Tsai-pin incorporates fruits and vegetables into his sushi rolls. He even creates convincing vegetarian and vegan sashimi! How does he do it? Chef Hu combines authentic Japanese cooking methods with fresh, all-natural ingredients. His creativity has led him to invent unique methods for infusing umami flavors into vegetables, a technique that results in convincing vegetarian sushi dishes that continuously wow his customers. During her visit, Aggie tries out nigiri sushi designed to imitate real seafood such as scallops, oysters, eel and even salmon roe. Beyond his kitchen innovations, chef Hu also manages to transform the rigid, upscale omakase dining scene into a lively, fun experience by interacting with diners through quizzes and guessing games.
