Vegetarian food comes in all varieties in Taiwan. This week's vegetarian restaurant, Chi Kan West House in historic Tainan, Taiwan, transforms fresh, organic ingredients into vegetarian versions of classic Western dishes. The restaurant is located on the first floor of a century-old house that takes its architectural influences from countries around the world. Upstairs from the vegetarian restaurant is a bed and breakfast. Here, vegetarian food is reimagined to create dishes that mimic world-famous meat-based cuisines, including French cordon bleu and foie gras (goose liver) with white truffle oil.
