Taiwanese Michelin Chef Sublimates Classic Pork Knuckle to the Next Level Ep5
In traditional Taiwanese cuisine, braised pork knuckle is an auspicious dish served in weddings, birthday dinners and Lunar New Years. Chef Garrison Cheng, whose restaurant has been consecutively selected in Michelin Guide for three years, makes a twist on classic pork knuckle by using both braising and frying techniques. Served with pepper salt, specialty mustard sauce and Taiwanese pickled vegetables, Chef Cheng’s pork knuckle is a collagen blast with crackly mouthfeel.
