Chef Wu from A-Sha Restaurant, which has been an all-time-favorite dining spot of presidents and dignitaries, demonstrates the A-Sha version of Steamed Mud Crab With Glutinous Rice that has kept gourmets coming for 60 years. The glutinous rice contains two types of pork and shiitake mushroom, whose aroma is released through sautéing in a wok. Female mud crab along with its succulent roe is then steamed with glutinous rice, allowing the oceanic flavors to percolate every grain of rice.
