Wood-smoked longan, the star ingredient in the award-winning bread, is a Taiwanese specialty that bespeaks the history of local logistics development. In the past, logistic challenges made selling fresh longans unfeasible. To preserve logans, farmers started sun-drying them in bunches, followed by low-temperature smoking for six days and five nights. The need for preservation has led to this unique ingredient that characterizes the taste of Taiwan.
