But this entomologist EATS insects! Bugs have fascinated Matan Shelomi since he was a child, and he knew early on in life that he wanted to become an entomologist when he grew up. But it wasn’t until he got older that he started incorporating insects into his diet. According to Shelomi, one reason to eat insects is their high protein content and low carbon footprint. Despite their benefits, Jenny is still in shock over the idea of eating bugs. Can she get over the idea and try out delicacies like mealworm avocado toast?
