At dawn, Hsu Ching-shan, an oyster farmer from Dongshi, Chiayi, is sailing his small boat toward the densely packed oyster racks along the shore. The plump, milky oysters glisten with a translucent luster, making one’s mouth water. This is his life’s pride. These fat oysters became the key ingredient in Wu’s Oyster Rolls, a famous restaurant in the area. Paired with their unique sauce, their oyster omelet has become a must-order signature dish for visiting customers. The oyster omelet sauce represents the fusion of different cultures and stands as a symbol of Taiwan’s historical and cultural evolution. As a result, renowned Taiwanese star chef Kai Ho uses the oyster omelet as a source of inspiration for his creative dishes, reinterpreting Taiwan’s island culture with gourmet cuisine, showcasing Taiwan’s uniqueness to the world.
