Bamboo shoots are a common delicacy in Asian cuisine. It has also attracted many from overseas. We tour bamboo forests with Tullio, hailing from Italy, as he explains to us his fascination with the many wonders of bamboo shoot cuisine. Bamboo shoots are also often locally referred to as ‘mountain abalone’ given their exquisite taste and different grades. On the outskirts of Taipei, we explore both century-old and modern bamboo shoot harvesting methods and the many lives that depend on them.
