Hakka people are known for being thrifty, practical and hardworking, and are experts in preserving food. Getting food dried in the sun is one way to extend the shelf life. In Hakka culture, anything can be sun-dried, for example, rice noodles, pickled mustard greens, dried cabbage, white radish, and persimmon. For Hakka people, the sun-dried process brings out the food's taste and displays Hakka's spirit and wisdom of cherishing resources.
