Flying Over the Hakka Village: Simple x Believing x Making It Happen
For nearly a century, Hu Chuan-ku's family has been making rice noodles in Jianshan of Miaoli. While Hsinchu is more famous as a rice noodle producer, Hu said Jianshan was also known for its rice noodles back in the day, with as many as 40 rice noodle factories during the Japanese colonization period. He is now one of the two remaining rice noodle makers in the town, saying that he still believes in the old business's values and will continue to preserve the traditional taste.
