Natalie Pickles Spills the Tea on Everything Hakka - Fusion Persuasion - EP2
Natalie Pickles is best known as a top 10 finalist in Asia’s Next Top Model Season 2. But her story extends far beyond the runway. Growing up, a love of tea was shared with both her British father and Taiwanese mother. She spent much of her childhood at her grandparents' Hakka tea plantation in Miaoli, where she developed a deep connection to tea culture. Surrounded by lush tea gardens, an appreciation for several varieties of oolong, particularly the exquisite Oriental Beauty tea, became a cornerstone of her identity. Fusion Persuasion collaborated with a private chef to create a bespoke dish inspired by traditional Hakka cuisine. Pan-seared duck breast paired with preserved vegetables is a modern twist on classic Hakka duck soup with fermented mustard greens. The green sauce is made the same Hakka fu chai, pickled mustard greens, along with sesame oil, and ginger meant to perfectly complement the duck's crispy, flavorful skin. Everything wraps up with Hakka ground tea Basque cheesecake and a blind tea tasting to round out the afternoon.
