The rice noodles from Hsinchu County used to be hit at home and overseas after World War II. The iconic sight of noodles being dried on bamboo racks was almost synonymous with the county. Lee Kiam-fen specializes in making these racks, which he supplied to rice noodle factories. Having spent more than seven decades in the business, he is ready to pass down his establishment to his son, and the craft has been preserved in its entirety. However, shifting eating habits among Taiwanese has posed new challenges to the art.
