Seasoned French chef Philippe Rouchet explores Hakka culture through food tours, from digging ginger, cooking chicken soup with ginger and pyramid dumplings, and making and tasting Hakka kumquat sauce and pickled mustard. On his journey in understanding Hakka food culture, chef Philippe discovers the Hakka family spirit. Inspired by this experience, he creates a few Hakka-French fusion dishes in appreciation of Hakka culture.
