In 2022, Michelin expanded its evaluation coverage to include Tainan and Kaohsiung. However, even before the official announcement, Southern Taiwan had already become a blue ocean market for Fine Dining. Local talent, such as Chef Thomas Chien from Thomas Chien Restaurant, and internationally trained Chef Marc Liao, who returned to Taiwan, as well as Fujimoto Shoichi, the head chef from a Michelin-starred restaurant in Japan who expanded his culinary expertise to Taiwan, share their perspectives on the Fine Dining market. A-Yong, known as the "Bando King" of Tainan, personally introduces the unique banquet style of Taiwan. Meanwhile, Wu Chien Hao, the successor of A SHA Restaurant, showcases how traditional Tainan restaurants preserve and refine Taiwanese cuisine while sharing their understanding of Fine Dining and Taiwanese flavors.
