A Michelin-Starred Chef’s Mission to Showcase Taiwan's Local Flavors
André Chiang is a Michelin starred chef with restaurants and collaborations across Asia and in France. His restaurants have topped globally rankings for years. Born in Taiwan, Chiang began training in the art of French cuisine at the age of 15. He started his career in the three-Michelin-starred Le Jardin de Sens in Montpellier. After 20 years away from Taiwan, he returned in 2014 to focus on his Taipei restaurant, RAW. Known for its exquisite creations, RAW was born out of a desire to showcase 100% Taiwanese ingredients and produce to the world. That mission is, in fact, driving Chiang beyond his restaurants -- as Taiwan Talks host Yin Khvat finds out in this exclusive interview.
